Dad’s Baked Oatmeal Recipe
Tomorrow’s Father’s Day. I love that Tim’s family can celebrate three generations of fathers together.
We have Pa, who is constantly adding his wisdom and years of experience to our farming endeavors. Dad, who juggles adult children, teenagers, younger kids, and grandkids at the same time and makes it look easy. Then Tim, who is an amazing daddy to our two little girls.
We are blessed!
I do miss my dad though! Being states away is hard, especially on holidays like this. I wish I could pop over, eat one of my mom’s amazing Sunday lunches, give him a hug in person and wish him a Happy Father’s Day.
I asked him to share a favorite recipe today. I wasn’t sure which one he’d pick, since he is quite good at cooking and baking (his apple crisp is to die for 😊). He settled on his Sunday morning Baked Oatmeal.
Every Sunday, for as long as I can remember, he would get up and put this in the oven for our breakfast. We would scoop out a piece, pour milk over it in a bowl and eat it like cereal. Delicious!
Warm for Sunday morning and then the leftovers were just as good cold on Monday.
Sometimes he’d put blueberries in it or even sprinkles for special occasions.
It is easy to customize it to your family’s tastes and needs.
You can mix it up the night before or the morning of. Eat it hot or cold. Whatever you need, to be able to enjoy the fathers in your life tomorrow!
Baked Oatmeal (print the recipe HERE)
9x9 pan recipe
½ cup brown sugar
1 ½ tsp baking powder
½ tsp cinnamon
½ tsp salt
2 ½ cups oatmeal (I generally use quick rolled oats)
1 cup of blueberries, fruit or chocolate chips (optional)
Mix together
In a separate bowl:
2 eggs
¼ cup oil
¾ cup of milk
Beat together and then add to oatmeal mixture. Mix until everything is wet. Put in a 9x9 pan and bake at 375 degrees for 30 minutes or until the top is golden brown and no longer looks wet. (If adding fruit or frozen fruit you may need to bake it longer.)
Measurements for a 9x13 pan recipe:
1 cup brown sugar
3 tsp baking powder
1 tsp cinnamon
1 tsp salt
5 cups oatmeal (I generally use quick rolled oats)
2 cup of blueberries, fruit or chocolate chips (optional)
3 eggs
½ cup oil
1 ½ cup of milk
Follow the same directions for the 9x9 pan recipe.
